Laissez les bons temps rouler

Yesterday we had a snow day, so I took the opportunity to do some serious cooking! You know--the kind that involves lots of pots, and a variety of techniques, and, did I mention, lots of pots?

I made shrimp etouffee (I don't know how to put the accent over the e). And collard greens.

I didn't get the roux quite dark enough, but other than that it came out fine, and was yummy. And I made enough sauce, rice, and greens, that if I am gentle I can rewarm the sauce, saute some more shrimp later this week, and have it all over again.

(For what it's worth, I use the Paul Prudhomme Louisiana Kitchen for most of my NOLA inspired meals.)

Today there will be pancakes!

Yes--it's all about the food!!

I miss gumbo....

You need Gumbo File?

Sadly, gumbo (shrimp, chicken, file, doesn't seem to matter) is my least favorite of the concoctions. I love shrimp Creole, jambalaya, muffalettas (and since I don't generally like sandwiches, that's saying something), blackened fish, etouffee [favorite], red beans and rice, but not so much the gumbo. Even if I cut way back on the okra [which I'm sensitive to sometimes], still last on my list.

*shrugs* don't know why--just is.

Having read my friends' LJs today, I think I'm making jambalaya for dinner tonight.

The way I generally get diacritical marks into my posts is I google the word, and cut and paste someone else who has figured it out. :)

accent aigu: 1. Turn on "number lock." 2. Hold down the alt key. 3. On the number pad to the right of the keyboard, type 130, while alt is being held down. 4. Lift all fingers. 5. é appears.

There are other number combinations for other diacritical marks. I can send you a list if you like.

Hmmm. Tried. Fail. Probably because it's a laptop keyboard. I shall try at work where there is a desktop and keyboard with numeric pad.

you might have better luck with the iphone- on the ipad, at least, if I hold my finger on the letter all the options pop up in a little mini-menu & then all I have to do if slide over to the one I want :)
